Memorial Day will be a bit different this year – no big cookouts in the backyard or picnics in the park – but you can still enjoy some delicious, classic cookout food! These sweet potato fries are quick, easy, and clean-eating approved.
What you'll need:
- 1 lb sweet potatoes (about 3 medium)
- 1 tsp chopped fresh rosemary leaves
- 1 tbsp olive oil
- 1/4 tsp sea salt
How to prepare:
- Preheat the oven to 425°F
- Scrub potatoes to remove any blemishes
- Cut each potato lengthwise into 1/2-inch slices
- Stack 2 slices together, then cut each slice into 1/2-inch strips
- Combine rosemary and olive oil in a small bowl
- Put potato strips in large bowl and add rosemary mixture, toss until evenly coated
- Line a large baking sheet with parchment and spread potatoes in a single layer
- Bake for 30 to 35 minutes, flipping potatoes over halfway through baking time, until lightly browned
- Remove from oven, sprinkle with salt and serve warm
