Memorial Day Sweet Potato Fries

Memorial Day will be a bit different this year – no big cookouts in the backyard or picnics in the park – but you can still enjoy some delicious, classic cookout food! These sweet potato fries are quick, easy, and clean-eating approved.

What you'll need:

  • 1 lb sweet potatoes (about 3 medium)
  • 1 tsp chopped fresh rosemary leaves
  • 1 tbsp olive oil
  • 1/4 tsp sea salt

How to prepare:

  • Preheat the oven to 425°F
  • Scrub potatoes to remove any blemishes
  • Cut each potato lengthwise into 1/2-inch slices 
  • Stack 2 slices together, then cut each slice into 1/2-inch strips
  • Combine rosemary and olive oil in a small bowl
  • Put potato strips in large bowl and add rosemary mixture, toss until evenly coated
  • Line a large baking sheet with parchment and spread potatoes in a single layer
  • Bake for 30 to 35 minutes, flipping potatoes over halfway through baking time, until lightly browned
  • Remove from oven, sprinkle with salt and serve warm
