Tools you’ll need:
One large baking dish
A bowl or 16 oz mason jar (one per serving)
2 pints strawberries, hulled and quartered
2 tablespoons agave nectar
1/4 cup high-quality balsamic vinegar
Parfait (each serving):
1/3 cup granola
3/4 cup nonfat Greek yogurt
- Preheat oven to 375 degrees.
- Combine strawberries, agave, and balsamic vinegar in a large baking dish and mix together. Bake for 30 to 35 minutes, until soft and bubbling.
- In each bowl or mason jar, combine granola and yogurt, and add a spoonful of roasted strawberries.
*The recipe makes two pints of roasted strawberries that can also be used in salads and as dessert toppings.
