Whether you’re having friends over for brunch or looking for a grab-and-go breakfast, this strawberry parfait is easy to make and high in calcium, protein and vitamin C. The recipe makes two pints of roasted strawberries that can also be used in salads and as dessert toppings.
Tools you’ll need:
One large baking dish
A bowl or 16 oz mason jar (one per serving)
2 pints strawberries, hulled and quartered
2 tablespoons agave nectar
1/4 cup high-quality balsamic vinegar
Parfait (each serving):
1/3 cup granola
3/4 cup nonfat Greek yogurt
- Preheat oven to 375 degrees.
- Combine strawberries, agave, and balsamic vinegar in a large baking dish and mix together. Bake for 30 to 35 minutes, until soft and bubbling.
- In each bowl or mason jar, combine granola and yogurt, and add a spoonful of roasted strawberries.
